Counting Blessings #228

228) I'm thankful that the two mistakes I made in making waffles today taught me some wonderful things! :)

I found a waffle recipe that's simple and good, but I've always disliked the amount of vegetable oil called for in the recipe, as well as wanting it to have whole grains in it. Today, I began making a batch of waffles before I remembered that I'd used up almost all of my white flour making bread yesterday. I had no choice but to try using almost all whole wheat flour. I also forgot the vegetable oil entirely, and low and behold, they were still great waffles! So, here's the original recipe, and the recipe the way I was using it, and finally the recipe as I made it today.

original recipe (x2, because I have four growing and very hungry kids)

4 eggs
4c. flour
3 1/2c. milk
1c. veg. oil
2T sugar
2 1/2T baking powder
1/2 t. salt
1t. vanilla extract

My usual

4 eggs
1c. whole wheat flour
3c. unbleached flour
3/4c. veg. oil
2T sugar
2 1/2T baking powder
1/2t. salt
1t. vanilla extract

the mistake that got me on the right track

4 eggs
1c. white flour
3c. whole wheat flour
Zero vegetable oil!
2T sugar
2 1/2t salt
1t. vanilla extract

easy method (very good)
whip eggs until light
add liquid ingredients
add dry ingredients
mix until smooth

still easy and supposedly better, but I really can't tell the difference
separate eggs and reserve whites
beat yolks until light
add liquid ingredients
add dry ingredients (except egg whites)
mix until smooth
whip egg whites until soft peaks form
fold egg whites into batter

  1. Sounds great! I'm all about finding ways to change a recipe to make it healthier! I've found that often times an ingredient isn't as crucial as I thought.

    For example, I didn't have eggs one time and figured out I could make even better pancakes substituting the egg and oil with pureed zucchini!

    The change was made out of necessity but it turned out to be a recipe that could be used to lower calories or for someone with an egg allergy.

    1. Poppy- I'll definitely have to try that with the zucchini. I've used pureed pumpkin and pumpkin pie spices as well as applesauce in my pancakes. The zucchini sounds great. :)

  2. That sounds yummy but you forgot to say what time breakfast is (I wouldn't want to be more than fashionably late-LOL) My waffle iron broke a few years ago and now you've got me thinking about replacing it!

    1. LOL! If you were coming, I'd probably not make whole wheat, no vegetable oil waffles. I'd probably go for part whole wheat, a bit of oil, served with whipped cream and strawberries. :) After all, it would be a very special occasion if you were here! You're welcome to join us around 7:45. If we had breakfast any earlier, half the family would be MIA. :)

    1. Hi Judy! Well, they weren't exactly TERRIFIC, but they were fine. So much like normal that it took me quite a while to realize that I'd forgotten the oil. Forgetting the oil sure made it easier to enjoy the butter I had with my syrup! :)
